Vegetable and Goat’s Cheese Pizza.
So, I have been cooking a lot lately and today I made this pizza for my mother and I to share.
I didn’t make the crust. Instead, I bought a “Top This” wholewheat crust at Whole Foods. It’s a bit high in calories so I’ve been looking at recipes to homemake one next time. Despite being high in calories, the ready made crust is very tasty and gets nice and crunchy.
I for one am trying to avoid carbs. So I add as many veggies on top to make it as filling as possible.
First I used organic tomato sauce, about a cup. Next I added a half of a cup of goat cheese crumble. Next, I added all of the vegetables that could be cooked for the full 10 minutes the crust called for: Portobella mushrooms, onions and an orange bell pepper. As you can see the peppers are only on my side, because I was sharing with a picky eater!
I then cooked the pizza for five minutes before adding the rest of the veggies (spinach, sprouts and avocado). Avocado on a pizza might seem strange, but i tried it for the first time in London and it is absolutely delicious.
Perfect light meal, about 450 calories for half of the pizza.
